- 6 cups Savoy cabbage (cut into fine strips)
- 3 Tbsps olive oil
- ⅜ cup dry white wine
- 4 Tbsps Crème fraiche
- unwaxed lemon zest
- 1 Tbsp fresh Dill (chopped)
- 4 Sole fillet (approx. 120 g each)
- 2 Tbsps Poppy seeds
- Dill (to garnish)
Preparation steps
1.
Quickly fry the cabbage in a hot pan in 2 tbsp oil. Deglaze with the wine, season with salt and cover with a lid. Steam for 6-8 minutes.

Bring a pot of water to the boil and brush a steamer insert with oil.

Mix together the crème fraîche, a pinch of lemon zest and the dill and season with salt and ground black pepper. Spread onto the skin side of the sole fillets and roll up.
4.
Place in the steamer insert, season with salt and ground black pepper and drizzle with the remaining oil. Sprinkle with the poppy seeds and cover with a lid. Steam for 3-4 minutes.
5.
Season the cabbage to taste and arrange on plates. Carefully place the sole rolls on top and serve garnished with dill.
