Preparation steps

Cut salmon fillet into 3/4 inch cubes. Rinse lime in hot water, rub dry and grate or zest the peel. Peel the ginger and grate finely. Mix oil in a bowl with ginger, lime zest, mustard seeds, salt, pepper, and 1 pinch of cayenne pepper. Add salmon pieces and leave to marinate for 1 hour.

Meanwhile, peel clementines and divide into segments. Clean fennel, pluck off the green and set aside; wash fennel and cut into thin slices. Clean and wash radicchio and cut into strips. Wash arugula and shake dry. Clean, wash and cut the spring onions into rings.

Mix salmon pieces with clementines, radicchio, arugula and fennel. Wash and pluck the fennel greens and add them to the salad ingredients. Mix everything well, drizzle the salad with the lime marinade and serve. Quarter the lime and add to drizzle if desired.
