500 grams Salmon (very fresh and skinless)
1 Orange
2 Tbsps olive oil
1 tsp coarse Sea salt
peppers (freshly ground)

Preparation steps

1.

Rinse salmon, pat dry and cut into 12 slices, each about 4-5 mm (approximately 1/8-1/4 inch) thick slices.

To make marinade: Rinse orange with hot water and pat dry. Finely grate zest and squeeze juice. Whisk juice with oil and pour half into a shallow baking dish. Place salmon in dish and drizzle with remaining marinade. Cover and let marinate about 20 minutes in the refrigerator.

In a mortar and pestle, lightly crush sea salt with orange zest.

Remove salmon from the marinade and arrange on plates. To serve, sprinkle with orange salt and season lightly with pepper.

5.

Garnish with fresh herbs if desired.
