- 500 grams Fish trimming
- Soup vegetables (such as carrot, leek, parsnip or other aromatic vegetables such as celery or onion)
- 1 onion
- 6 peppercorns
- 1 bunch Dill
- water
- 4 Salmon cutlets (each about 200 grams)
- 1-2 lemons
- 150 grams Crème fraiche
- 1 small Radicchio
- 10 grams butter
- Salt, freshly ground pepper
- 1 pinch sugar
Preparation steps

Place fish pieces, cleaned soup vegetbles, quartered onion, peppercorns and dill stems into the water in a pot and cook for 20-30 minutes. Strain through a sieve into a flat wide pot and bring to a boil.

Add salmon to the broth and simmer for about 12-15 minutes. Remove salmon from the broth and keep warm. Simmer down broth until reduced to 1/3.

Squeeze lemon jiuce. Whisk crème fraîche into broth and simmer until smooth. Rinse radicchio and cut into fine strips. Heat butter in a pan and saute radicchio briefly. Season sauce with lemon juice, salt, pepper and sugar. Arrange fish and raddichio on plates and drizzle with sauce. Serve with rice or boiled potatoes, if desired.
