- 1 large Zucchini
- salt
- 12 Cherry tomatoes
- 1 red onion
- ½ lemon
- 3 sprigs mint
- 12 ozs Chicken breasts
- peppers
- 2 Tbsps olive oil
- 1 pinch cane sugar

Preparation steps
Rinse zucchini, trim and slice lengthwise into thin strips. Sprinkle with salt, place in a bowl and let stand about 10 minutes.
Rinse and halve the cherry tomatoes. Peel onion and cut into fine strips. Squeeze lemon. Rinse mint, shake dry, pluck leaves and chop coarsely.
Rinse chicken breasts, pat dry and cut diagonally into thin slices. Season with salt and pepper. Heat a grill pan, coat with 2 teaspoons oil and grill the chicken on each side 1-2 minutes.
Drain the zucchini and squeeze out gently. Mix with onion, tomatoes, lemon juice and remaining oil. Season with pepper, sugar and mint. Place salad on a plate and serve with the chicken.
