Rinse lettuce leaves and spin dry. Peel and halve onions, cut into thin wedges. Peel 3 oranges, removing as much pith as possible, and fillet. Squeeze juice from remaining orange.

Season shrimp with salt and pepper. Cut salmon into strips. Rinse and shalke dry basil, pluck off leaves. Whisk orange juice with olive oil.

Arrange lettuce leaves in bowls. Top with remaining ingredients and mix gently. Drizzle with orange and olive oil mixture and garnish with salmon caviar. Serve immediately.
