3 Zucchini
2 ozs Spinach
2 shallots
2 garlic cloves
¾ oz ginger (1 piece)
2 Tbsps sesame oil
14 ozs shrimp (ready to cook; without shell)
5 ¼ ozs Coconut milk
14 ozs fish stock
14 ozs Soba Noodles
salt
2 Tbsps Fish sauce
3 Tbsps lemon juice
cayenne pepper
½ bunch cilantro

Preparation steps

1.

Zucchini clean, wash and quarter lengthwise, then cut into slices. Clean spinach, wash and spin dry. Peel shallots, halve and cut into thin slices. Peel and finely chop garlic and ginger.

Heat oil in a frying pan. Add shallots, garlic and ginger and sauté for 2 minutes over medium heat. Add zucchini and sauté for about 5 minutes. Then add spinach and let it collapse.

Then add shrimp, coconut milk and stock, cover and simmer over low heat for about 5 minutes, stirring occasionally.

Meanwhile, cook soba noodles according to package directions in plenty of boiling salted water until al dente. Drain in a colander and allow to drain.

Season sauce with fish sauce, lemon juice, salt, pepper and cayenne pepper. Mix noodles into the sauce. Wash cilantro, shake dry and pluck leaves. Place noodles on plates and serve sprinkled with cilantro.
