150 milliliters dry white wine
150 milliliters fish stock
1 tsp honey
1 shallot (finely chopped)
1 garlic clove (finely chopped)
2 Tbsps Dill (finely chopped)

Preparation steps

Rinse sole fillets and pat dry.

In a pan, sauté shallot and garlic in melted butter. Deglaze with white wine and fish stock and simmer briefly. Stir in dill and honey. Place fish fillets in sauce. Cover and cook over low heat until fish is cooked through, 4-5 minutes. Season with salt, lemon juice and pepper. Serve fish with sauce and garnish with dill and lemon wedges.
