1 cup honey
1 unwaxed Orange (finely grated zest)
1 cup toasted almonds
3 cups breadcrumbs
½ tsp Orange blossom water

Preparation steps

1.
Line a 23cm|9" square tin with wafers or rice paper.
2.
Heat together the honey and orange zest in a pan and bring to a simmer. simmer for 2 minutes.
3.
Stir in the nuts, then the breadcrumbs and stir well until the mixture leaves the sides of the pan.
4.
Remove from the heat and stir in the orange flower water.
5.
Press evenly into the tin and cover with another sheet of wafers or rice paper. Press gently until smooth. Leave until cold.
6.
Cut into pieces to serve.
