- 60 grams butter
- 3 Tbsps Pastry flour
- 200 milliliters milk
- salt
- freshly ground peppers
- ground Nutmeg
- 6 eggs
- 150 grams Mountain cheese
- ½ fresh lemon

Melt a little butter and butter ramekins. Combine flour with remaining butter in a saucepan and cook on medium heat, stirring.

Remove pan from heat, add milk and mix until smooth. Simmer for 1 minute. Season with salt, pepper and nutmeg and remove from heat.
