4 Tbsps white balsamic vinegar
2 Tbsps scallions

Preparation steps

Rinse and trim the spinach, then drain well. Cut the bacon into strips. Peel and finely chop the garlic and shallot.

Sauté the bacon in the oil until golden brown, then add the shallot and garlic and sauté briefly. Remove from the heat, and add 2-3 tablespoons of water and vinegar. Season with salt and pepper, then add to the spinach. Toss thoroughly until combined. Garnish with the chives and serve immediately.
