1 pinch salt
2 packets Vanilla sugar
200 milliliters Apple juice
1 Tbsp sugar (about 20 grams)
1 red chili pepper
1 Tbsp red peppercorns
1 Tbsp Rice vinegar
1 tsp soy sauce
4 Strawberries
1 Kiwi

Preparation steps

1.

Rinse 1/2 lemon in hot water, pat dry and cut a strip from peel.

Boil milk in a saucepan. Add rice, lemon peel and salt and return to a boil. Stir in vanilla sugar, cover and cook for 30 minutes over very low heat. Remove from heat and transfer to a bowl. Cool completely, then remove lemon peel.

While the rice cools, mix apple juice with sugar in a saucepan. Rinse chile pepper, cut in half, remove seeds and chop flesh. Crush peppercorns coarsel and add to saucepan along with chile pepper, rice vinegar and soy sauce. Boil  mixture until reduced by about one-half. Let dipping sauce cool.

Using wet hands, divide mixture into 8 portions and shape each into a sushi shape.

Rinse and hull strawberries, pat dry and cut into slices. Peel kiwi and cut into thin slices.

6.

Top half of rice shapes with strawberries and remaining half with kiwi, slightly overlapping slices. Season with pepper. Serve with dipping sauce.
