Due to the many anthocyanins and carotenoids from sweet potatoes, the orange vegetable has a high antioxidant as well as anti-inflammatory effect on offer. Thanks to so-called polyphenols that olives provide they are excellent radical scavengers and protect cells from damage.
Instead of sweet potato, you can also prepare the spaghetti from other vegetables - how about pasta made from zucchini or carrots, for example? If you don't have a spiral slicer, you can prepare the sweet potato spaghetti with a peeler and serve it as pappardelle.

- 1 ¾ ozs green Olives (without stone)
- 1 shallot
- 2 Tbsps Caper (drained weight)
- 3 Tbsps olive oil
- 36 ozs Sweet potato
- 1 garlic clove
- 10 ozs frozen Fava bean
- salt
- peppers
- 4 eggs
- 1 tsp butter
- 1 handful parsley
- Red pepper flakes

Preparation steps
Finely chop olives. Peel and finely dice the shallot. Chop capers. Sauté everything in a pan in 1 tablespoon oil for 5 minutes over medium heat; then set aside.
In the meantime, clean and peel sweet potatoes and process into spaghetti using a spiral slicer. Peel and finely dice garlic. Cook fava beans in boiling water for 5 minutes. Then drain, and remove the skins.
Heat remaining olive oil in a large skillet. Sauté garlic, beans and sweet potato spaghetti in it for 5 minutes over medium heat. Deglaze with 1 dash of water and allow to cook down a bit, the sweet potato spaghetti should still have bite. Season with salt and pepper.
Heat butter in a large non-stick frying pan. Crack eggs into it and fry over medium heat for 5-6 minutes to form fried eggs, season with salt and pepper. Wash parsley, shake dry and chop. Arrange everything on plates, drizzle with olive mixture, sprinkle with chili flakes and garnish with parsley.
