1 shallot
2 Tbsps Caper (drained weight)
3 Tbsps olive oil
36 ozs Sweet potato
1 garlic clove
10 ozs frozen Fava bean
salt

1 handful parsley

Preparation steps

Finely chop olives. Peel and finely dice the shallot. Chop capers. Sauté everything in a pan in 1 tablespoon oil for 5 minutes over medium heat; then set aside.

In the meantime, clean and peel sweet potatoes and process into spaghetti using a spiral slicer. Peel and finely dice garlic. Cook fava beans in boiling water for 5 minutes. Then drain, and remove the skins.

Heat remaining olive oil in a large skillet. Sauté garlic, beans and sweet potato spaghetti in it for 5 minutes over medium heat. Deglaze with 1 dash of water and allow to cook down a bit, the sweet potato spaghetti should still have bite. Season with salt and pepper.

Heat butter in a large non-stick frying pan. Crack eggs into it and fry over medium heat for 5-6 minutes to form fried eggs, season with salt and pepper. Wash parsley, shake dry and chop. Arrange everything on plates, drizzle with olive mixture, sprinkle with chili flakes and garnish with parsley.
