75 milliliters black Tea (1/2 teaspoon tea leaves)
3 egg yolks
3 Tbsps sugar
200 grams Whipped cream
2 Oranges
1 tsp freshly grated ginger
Orange peel
mint (for garnish)

Preparation steps

1.

Add 2 egg yolks and 2 tablespoons sugar into a metal bowl. Pour in tea. Mix until creamy over a hot water bath. Cool bowl in cold water. Whip cream and fold into egg mixture. Spoon into a rectangular mold. Place in the freezer for three hours.

Peel oranges with a sharp knife, carefully removing skin and pith. Cut fillets by separating membranes with knife. Squeeze juice from remaining residue.

Cut orange peel into very thin strips. Beat remaining egg yolk, 1 tablespoon sugar and orange juice over hot water bath until frothy. Add ginger.

4.

To serve, remove from freezer and cut into thick slices. Garnish with orange segments, ginger sauce and mint leaves.
