- 1 small Orange
- 3 ozs small Prawn
- 1 generous pinch cayenne pepper
- 14 ozs chunky Tomatoes (box or canned)
- ½ cup Coconut milk
- ½ cup Vegetable broth
- 1 scallion
- salt

Preparation steps
Halve and squeeze orange. Mix orange juice with prawns and cayenne pepper.
Mix tomatoes with coconut milk and broth in a pot. Bring to a boil and cook for 5 minutes over low heat.
Meanwhile, trim scallions, rinse and cut diagonally into very thin rings.
Add prawns and orange juice to the soup and heat until prawns are cooked through. Season soup with salt and a little cayenne pepper to taste.
Ladle soup into soup plates or soup bowls. Sprinkle with scallions and serve.
