Preparation steps

Rinse the tomatoes and cut into quarters. Remove the seeds and cores, and dice into 1-2 cm (approximately 1/2 - 3/4 inch) cubes. Peel and finely dice the onion. Rinse and dry the cilantro. Save a few whole leaves for garnish, and finely chop the rest. Mix the tomatoes, onions, and cilantro. Mix in the lime juice, olive oil, and sugar. Season to taste with salt, and let rest for at least 30 minutes before serving.
