250 grams large white button Mushroom
2 tsps olive oil
few drops balsamic vinegar
2 tsps herbes de Provence
salt
white freshly ground pepper
500 grams Tomatoes (preferably beefsteak tomatoes)
4 slices Toast (or box white bread)
4 small Goat cheese (30 grams)

Preparation steps

1.

Clean the mushrooms with a damp cloth and slice. Peel the garlic. In a bowl, mix the mushrooms with the oil, vinegar and herbes de Provence, season with salt and pepper.

2.

Press the garlic through a garlic press. Rinse and slice the tomatoes.

3.

Heat the broiler. Place the bread on a baking sheet and lightly toast. Top with the tomatoes, season with salt and pepper. and place the mushrooms on top.

4.

Place the goat cheese on top and broil until the cheese has melted.
