2 onions
3 garlic cloves
2 chili peppers
80 grams Bacon
1 Tbsp vegetable oil
salt

½ tsp oregano
1 pinch sugar

Preparation steps

Blanch the tomatoes in boiling water. Remove from the water and peel. Cut the tomatoes in half, remove the seeds, and finely dice. Peel and finely dice the onions and garlic. Rinse the chilis and halve lengthwise. Remove the seeds and julienne. Finely dice the bacon.

Heat the oil in a saucepan, and sauté the bacon. Add the onions and garlic, and sauté until golden brown. Add the diced tomatoes and chilis, then season to taste with salt, pepper, oregano, and sugar. Simmer for 20 minutes, until thickened, then remove from the heat and cool.
