- 2 onions
- 2 garlic cloves
- 2 Tbsps olive oil
- 750 milliliters Vegetable broth
- 600 grams Tomatoes
- 100 grams Couscous (Instant)
- lemon juice
- salt
- cayenne pepper
- 1 handful fresh Fresh herbs (such as parsley and lemon balm)

Peel, halve and cut onions into strips. Peel and finely chop garlic. In a pot, sauté onions and garlic in hot oil until translucent.

Deglaze with broth and bring to a boil.

Rinse tomatoes, blanch in boiling water, drain, peel, quarter, core and cut into cubes. Add couscous to soup and simmer about 15 minutes over low heat.

Rinse herbs, shake dry, strip from stems, and finely chop. Ladle soup into bowls and serve garnished with herbs.
