When it comes to flour, the higher the flour type on the package, the more minerals are contained in the flour - so it is recommended to use the highest possible flour type when preparing Kaiserschmarrn vegan.

- 2 Tbsps Raw cane sugar
- 7 ozs Oat Milk
- 7 ozs whole spelt flour
- 2 tsps cream of tartar
- salt
- 3 ozs Chickpea- water (aka Aquafaba)
- 11 ozs Blueberries
- 1 Cinnamon stick
- 7 ozs Coconut yogurt
- 2 Tbsps slivered almonds
Preparation steps
Mix whole cane sugar with oat milk, then add flour, baking powder, and a pinch of salt and mix until smooth.
Beat aquafaba (chickpea water) until stiff and gently fold into the other ingredients.
Heat canola oil in a pan and pour batter into pan. Bake for about 5 minutes until golden brown and small bubbles appear on the surface.
Turn dough over, bake on the other side for another 3-5 minutes, and break into bite-sized pieces with a spatula.
For the blueberry compote, clean and wash blueberries and bring to a boil briefly in a small saucepan, then simmer over low heat for about 5 minutes.
Garnish the vegan Kaiserschmarrn with coconut yogurt, blueberry compote, and almond flakes, and serve.
