Preparation steps

1.
Put the carrots into a large pan and add the shalllot, rice, broccoli and 300ml water.
2.
Bring to the boil, cover and simmer for 20 minutes until the rice is tender and the liquid is absorbed.
3.
Use a stick blender and whiz for a few seconds to make the mixture semi- smooth.
