150 grams Holsteiner Smoked ham (in slices)
300 grams starchy potatoes
150 grams butter

Preparation steps

1.

Peel asparagus and cut off woody ends. Tie together with kitchen twine and bring a pot of salted water to a boil. Add a pinch of sugar and asparagus. Simmer for 25 minutes.

2.

Peel potatoes and cook until knife-tender in salted boiling water, about 20 minutes. Drain, rinse in cold water and drain again.

3.

Remove asparagus carefully and cut away kitchen twine. Heat butter in a small saucepan and skim off foam.

4.

Distribute asparagus on plates and serve with ham and potatoes. Serve with butter.
