1 pinch sugar
1 tsp butter
200 grams Smoked ham (sliced)
500 grams starchy potatoes
150 grams butter

Preparation steps

1.

Peel the asparagus, snap off the woody ends and then bundle together with kitchen twine. Bring a large pot of salted water to a boil with the sugar and butter. Add the asparagus and cook for about 18 minutes.

Peel the potatoes and cook in salted water for 20 minutes, until fork-tender. Drain.

3.

Carefully remove the asparagus from the water and discard the twine. Heat the butter in a small saucepan and skim off the foam.

4.

Arrange the asparagus on serving plates along with the ham and potatoes. Drizzle with clarified butter.
