For the asparagus
2 kilograms white Asparagus
For the hollandaise sauce
250 grams butter
2 egg yolks
4 Tbsps dry white wine
2 Tbsps lemon juice
salt
white peppers
300 grams Smoked salmon (sliced)

Preparation steps

For the asparagus: Peel the asparagus and cut off the woody ends. Bring a large pot of salted water to a boil along with 1 tablespoon butter. Add the asparagus and cook for around 18 minutes.

For the hollandaise sauce: Melt the remaining butter and skim off the foam. Whisk the egg yolks and wine over a hot water bath until frothy. Gradually whisk in the butter drop by drop at first then in a thin steady stream until thick and creamy. Add the lemon juice and season with salt and pepper.

Drain the asparagus.

To serve, arrange the smoked salmon and asparagus on serving plates and drizzle with hollandaise sauce.
