Serve this with a light side salad dressed in a vinagrette.

8 ozs canned Artichoke hearts (drained, finely chopped)
1 cup gluten-free breadcrumbs
salt (to taste)
peppers (to taste)
2 eggs
2 Tbsps olive oil
2 Tbsps grated Parmesan
1 Tbsp lemon juice
2 cloves garlic cloves (crushed)
To serve
lemon and pine nut sauce

Preparation steps

Heat the oven to180°C (160° fan) 350°F gas 4. Line a baking tray with non-stick baking paper.
2.
Mix together all the ingredients until well combined.
3.
Shape the mixture into 20-24 small ballsand place on the baking tray.
4.
Bake for 10-15 minutes until piping hot and cooked through.
5.
Serve with lemon and pine nut sauce.
