½ bunch Arugula (approximately 50 grams)
½ Cucumber
2 Tbsps Horseradish (Freshly grated or from a jar)
salt
freshly ground peppers
8 slices Whole Wheat Toast (crusts removed)

Preparation steps

1.

Rinse, trim and remove and thick stems from arugula. Coarsely cut arugula.

2.

Peel and thinly slice cucumber. Stir cream cheese with horseradish until smooth and season with salt and pepper. Toast bread. Spread toast slices with cream cheese mixture. Layer half of slices with cucumber and arugula and top with remaining slices of toast. Press down slightly to seal and cut sandwiches in half diagonally. Serve on plates.
