100 grams cooked potatoes

Preparation steps

1.

Peel the asparagus and cut off the ends. Cook in salt water with a pinch of sugar and for 12-15 minutes.

2.

Cut the potatoes into small cubes. Remove the fat from the ham and also cut into small cubes.

3.

Rinse the chives and cut into rings.

4.

Stir the vinegar and 1/2 cup asparagus stock together and season with salt and pepper. Drizzle in the oil with a whisk. Stir the potatoes and diced ham with chopped chives.

5.

Serve the asparagus with ham and potato vinaigrette on warmed plates.
