½ tsp ground Turmeric
1 ½ Tbsps honey

4 ozs lamb's lettuce
1 bunch red radish Cress
4 Tbsps Nut oil
1 tsp Mustard
2 Tbsps lemon juice

Preparation steps

1.

Clean the endive, wash, cut in half lengthwise and place in a baking dish or on a baking tray. Whisk olive oil with turmeric and 1 tbsp honey and season with salt and pepper. Drizzle the chicory with the turmeric oil and bake in a preheated oven at 200 °C / 390°F for approx. 10 minutes.

Meanwhile, peel kiwis and cut into small cubes. Coarsely chop the pistachio nuts. Crush the pepper berries. Clean the lamb's lettuce, wash and spin dry. Cut cress from the bed and wash.

Mix kiwi cubes with nut oil, mustard, lemon juice, 2 tbsp. water and remaining honey to a dressing and season with salt, pepper and pepper berries. Arrange the lamb's lettuce on 4 plates. Remove the endive from the oven, place on the lamb's lettuce, drizzle with dressing and sprinkle with radish cress and pistachios.
