8 Mackerel (with skin, approx. 100 g each)
1 Lime (juiced)
olive oil
1 Orange (filleted, juice retained)
1 tsp honey
2 scallions (sliced diagonally)
1 Tbsp fresh cilantro (chopped)
Lime wedge (to garnish)

Preparation steps

Drizzle the fish with the lime juice and season with salt and ground black pepper. Brush with oil and place on the grill, skin side down. Grill for around 5 min until golden brown, turn and grill on the other side for 3-4 min.

Mix together the orange juice and the honey. Add the fish, spring onions and the coriander. Arrange the fish on a plate, arrange the orange fillets on top and serve garnished with lime wedges.
