2 Tbsps olive oil
4 Flatbread
4 Tbsps Mayonnaise
4 large Lettuce
½ Red onion (peeled and sliced)
2 medium Tomatoes (sliced)

Preparation steps

1.
Cut each chicken breast diagonally into 6 pieces and brush with olive oil. Heat a griddle pan on the hob until very hot then cook the chicken pieces for 3 minutes on each side.
2.
Put a flatbread onto each plate and spread with half of the mayonnaise. Lay a lettuce leaf on each one and scatter over the onion and tomato.
3.
Lay 3 pieces of chicken on top of each flatbread and spoon over the rest of the mayonnaise.
4.
Fold over the sides of each flatbread and secure with a cocktail stick.
