Christmas Ham Glazed with Marmalade

Serve this comforting ham with a simple side salad to help cut the fat.

- 4 ½ lbs ham (with bone)
- 1 onion
- 1 carrot
- 1 stalk Leeks
- 1 tsp peppercorns
- 1 tsp Coriander
- 2 bay leaves
- 1 Cinnamon stick
- 2 Oranges
- 1 Tbsp cloves
- 4 ozs Jam (such as Orange)
- 2 Tbsps grainy Mustard
- 1 tsp brown sugar
Preparation steps
Trim ham as needed for cooking, tie with kitchen twine and place into a large pot.
Peel onion and carrot. Rinse leek and trim. Coarsely chop onion, carrot, and leek and add to the pot. Add peppercorns, coriander seed, bay leaf, and cinnamon to the pot.
Pour cold water into the pot until ham is well covered. Cover the pot and simmer for approximately 2.5 hours. Cut oranges into slices.
Lift cooked ham from the pot and let cool slightly.
Then remove kitchen twine and remove the rind. Place ham in a roasting pan and cover remaining thin layer of fat with orange slices and cloves.
Preheat the oven to 350°F.
For the glaze, mix marmalade in a bowl with mustard and sugar. Brush ham with glaze and cook in the oven for approximately 40 minutes until browned and crisp. During the cooking time, brush ham occasionally with the glaze. Let cool slightly and serve sliced while still warm or cold.
