1 tsp Vanilla
4 ozs whole spelt flour
2 tsps Baking powder
2 Tbsps Raw cane sugar
1 pinch salt
2 tsps butter
18 ozs Strawberries
4 Lemon balm

Preparation steps

1.

Rinse lemon half, pat dry, finely grate zest, and squeeze juice. Mix both with cottage cheese, eggs and vanilla. In another bowl, mix flour with baking powder, 1 tablespoon sugar, and 1 pinch salt and add to cottage cheese. Mix everything thoroughly.

Bake a total of 8 small pancakes one after the other. To do this, heat 1 tsp of butter in a large frying pan. Pour in 4 blobs of batter and bake over medium heat for 3-4 minutes per side until golden brown. Use up remaining batter in the same way.

In the meantime, clean and wash the strawberries, cut 1/3 of them into small pieces and set aside; puree the rest with the remaining sugar. Wash lemon balm, shake dry and pluck off leaves.

Drizzle cottage cheese pancakes with strawberry puree, top with remaining berries and garnish with lemon balm.
