Hazelnuts are rich in vitamin E, which inhibits inflammation and supports the immune system. It also has an antioxidant effect, providing protection against free radical damage. Fiber from chia seeds, dates, and wholemeal flour is good for the intestines, provides long-lasting satiety, and stimulates digestion.

The date cookies can be well modified and adapted to your own taste: How about almonds or walnuts instead of hazelnuts, for example? The rice syrup can optionally be replaced by sugar beet syrup or honey. If you can't get cocoa nibs, use chopped almonds, hazelnuts or dark chocolate.

½ Vanilla bean
7 ozs ground Hazelnuts
13 ozs Whole Grain Spelt Flour
1 ¾ ozs Chia seeds
1 pinch cinnamon
1 pinch Fleur de sel (salt)
1 ¾ ozs Coconut oil
5 ¼ ozs Rice syrup (alternatively sugar beet syrup)
1 egg
1 ¾ ozs cacao nib

Preparation steps

1.

Put dates in a bowl, cover with boiling water. Let stand for 5 minutes, then drain. Meanwhile, cut vanilla bean in half lengthwise and scrape out the pulp with a knife.

Process dates with hazelnuts, flour, chia seeds, cinnamon, fleur de sel, coconut oil, syrup, egg, and vanilla pulp in a food processor until finely combined. Fold in the cacao nibs.

3.

Form 30 balls from the mixture with your hands, place on a baking sheet lined with parchment paper, flatten slightly and press in a pattern with the back of a fork.

4.

Bake date cookies in preheated oven at 350 °F for 10-15 minutes.
