Preparation steps

Rinse flounder and pat dry. Sprinkle with a little lemon juice, season with salt and pepper and dredge in flour. In a large skillet, fry flounder in hot, clarified butter until golden-brown, 4-5 minutes per side. During cooking, spoon butter repeatedly over fish.

Cut bacon into thin strips. Peel shallot and cut into rings. In another pan, fry bacon and shallot in butter until golden-brown, 2-3 minutes. Stir in dill and remaining lemon juice and season with salt and pepper. Dip flounder in the butter mixture. To serve, transfer fish to plates and serve with dill butter.
