Preparation steps

1.

Heat oil in a frying pan and toast pine nuts over moderate heat, then add wild garlic, heat briefly and season with salt and pepper. Remove from the heat and leave to cool.

2.

Trim gorgonzola, remove rind if necessary and strain through a sieve. Whip cream in a bowl, fold in gorgonzola and season with pepper.

3.

To serve, arrange Gorgonzola cream on a plate and garnish with wild garlic and pine nuts.
