- 1 ½ kilograms green Asparagus
- salt
- 1 Tbsp sugar
- 2 Tbsps olive oil
- 1 lemon (juiced)
- freshly ground peppers
- 250 grams Yogurt (0.1% fat)
- 50 grams Mayonnaise
- 1 tsp Horseradish (from a jar)
- 2 Tbsps freshly chopped Dill
- 200 grams Smoked salmon
- Dill (for garnishing)
Preparation steps
1.
Peel bottom thirds of asparagus and cut off woody ends. Cook in boiling salted water with a little sugar for about 10 minutes or until al dente.

Whisk oil with 2-3 tablespoons of lemon juice, season with salt and pepper. Dran asparagus, rinse in cold water and drain well. Arrange on plates and drizzle with the dressing, let stand for about 15 minutes.

Whisk yogurt with mayonnaise, horseradish and dill and season with salt, lemon juice and pepper.
4.
Wrap few asparagus stalks into salmon slices and arrange on plates decoratively. Drizzle with a little sauce and serve remaining sauce separately. Serve garnished with dill.
