800 grams green Asparagus
1 Tbsp olive oil

2 Tbsps lemon juice
8 slices Smoked salmon

Preparation steps

1.

Peel the bottom third of the asparagus and sauté the spears in some oil on all sides. Season with salt and pepper and pour in a little water. Cover and simmer for about 10 minutes, until tender but with a slight bite.

Drizzle the lemon juice over the asparagus, toss the spears to coat them and then let the liquid evaporate.

3.

Serve on plates with 2-3 slices of smoked salmon and garnished with lemon wedges if desired.
