- 2 egg yolks
- 3 peppercorns
- 1 generous pinch Mustard seed
- 2 Tbsps lemon juice
- 300 milliliters olive oil
- 4 garlic cloves
- 1 generous pinch ground Saffron
Preparation steps

Add the yolks to a bowl. Crush the peppercorns and mustard seeds finely with a mortar, and add to the yolks. Beat with a hand mixer until creamy, then add the lemon juice. Slowly incorporate the oil, starting with a few drops, until well combined. Increase the amount of oil gradually to a thin stream and beat strongly until a thick and creamy mayonnaise has formed.

Peel the garlic and mash finely with 1-2 tablespoons of oil in a blender. Add the garlic paste and saffron to the mayonnaise.

Let rest for at least 1 hour.

Rinse the prawns and halve lengthwise. Drizzle the uncut sides with oil and season with salt. Grill on both sides shortly until the shrimp has turned opaque. Toast the bread on the grill, and serve with the aioli.
