4 trout (each about 300 grams)

Preparation steps

1.

Rinse the trout with cold water and gently pat dry with paper towels. Coarsely mash 1 tablespoon of capers in a mortar, mix with the olive oil and the juice of half a lemon. Season with salt and pepper. Season the inside of the trout with salt and pepper.

Brush the outside of the trout with the oil and caper marinade. Cook the trout over medium heat on the grill for about 6 minutes per side. Cut the remaining lemon into slices. Serve the trout with capers and the remaining lemon slices as garnish.
