4 whole, smaller trout ((gutted and ready for cooking)
3 lemons
2 bunches parsley
2 sprigs mint
2 shallots
salt
freshly ground peppers
vegetable oil

Preparation steps

1.

Wash fish and pat dry. Reserve some of the parsley leaves. Finely chop the remaining parsley, hyssop, and the shallots and mix together. Add the grated zest and juice of 2 lemons, salt, and pepper to the mixture. Fill trout cavities with mixture.

Make slits in the fish skin and insert some lemon slices with peel. Put some oil on the fish, and grill on both sides for about 5 minutes, occasionally adding oil. Serve with parsley.
