4 whole trout (each about 350 g)
2 organic lemons
salt
freshly ground peppers
2 garlic cloves
1 handful Sage
4 Tbsps olive oil

Preparation steps

Preheat the grill.

Rinse the trout and pat dry. Cut the lemon in half. Cut 1 half into thin slices. Squeeze the juice from the other half. Season the fish with salt and pepper to taste and drizzle with the lemon juice. Peel and thinly slice the garlic. Rinse the sage, shake dry and pluck leaves from stems. Stuff the trout with the lemon slices, garlic and sage leaves. Place the fish in grilling baskets with 1 large sage leaf on top of each.

Place on the grill and drizzle with 2 tablespoons of the olive oil. Cook for 10-12 minute per side. Drizzle with remaining olive oil. The trout is cooked when the fin can be removed easily.
