3 ½ ozs honey
3 ½ ozs brown sugar
4 Tbsps butter
2 eggs
½ tsp Baking powder
9 ozs Pastry flour
1 tsp cinnamon
1 pinch Nutmeg
1 pinch Ground clove
1 pinch ground Cardamom
½ whole Orange (zested)
1 Tbsp milk
20 almonds (halved)

Preparation steps

1.

Heat the honey, brown sugar and butter in a pan. Let the sugar melt and then remove from heat and cool it down.

Beat the eggs and add 2 tablespoons of it to the honey mixture. Cover the remaining egg and keep in the refrigerator.

Mix the baking powder, flour, spices and orange zest in a bowl. Fold in the flour mixture into the honey mixture and knead to form a smooth dough. Let it rest in a covered bowl in the refrigerator overnight

Roll out the dough on a floured surface into about 1.5" thick disc. Cut out the dough with blossom shaped cookie cutters.

Mix the remaining egg with the milk and sprinkle the cookies with it. Place half almond on each cookie and put the cookies on a greased baking sheet.

Bake in a preheated oven at 400°F, until golden brown, about 12 minutes. Remove the cookies from the oven, cool down, and serve dusted with powdered sugar.
