Preparation steps

1.

Preheat the oven to 200°C (approximately 400°F). Peel the onions and cut into rings. Peel the oranges, discard the white pith and slice. Rinse, dry and slice the lemons.

Rinse trout and pat dry. Season with salt and pepper and brush the inside with lemon juice. Put 2 thyme sprigs, the onion slice and the orange slices inside each fish.

3.

Brush some olive oil on a baking sheet and arrange the fish on it with the lemon slices. Bake for 25–30 minutes. If desired, serve the fish on a decorative bed of young fir or spruce tips.
