- 1 sm head Radicchio
- 2 small Red onions
- 1 Tbsp Pine nuts
- 3 ozs Prosciutto (trimmed of excess fat)
- 6 ozs Pappardelle noodles
- salt
- 2 Tbsps olive oil
- ½ cup dry white wine (or grape juice)
- ¾ cup Soy creamer
- ½ lemon
- peppers

Preparation steps
Rinse radicchio, cut in half and remove the stalk. Cut crosswise into thin strips.
Peel the onions and cut into thin strips. Toast pine nuts in a dry skillet until golden and let cool on a plate.
Cut the prosciutto into 1 cm (approximately 1/2-inch) wide strips. Cook the pasta according to package directions in plenty of salted water until al dente.
Meanwhile, heat oil in a skillet and fry the onions over medium heat until translucent, about 4 minutes. Add radicchio and sauté 1 minute.
Add white wine and simmer for 5-10 minutes.
Add soy creamer and cook for 2 minutes.
Add prosciutto and cook 1 more minute. Squeeze lemon. Season the sauce with salt, pepper and 2 teaspoons lemon juice.
Drain the pasta in a sieve and mix with the sauce. Serve pasta sprinkled with pine nuts.
