250 grams short Spiral pasta
freshly ground pepper (and salt)
2 Tbsps Pine nuts
4 Tomatoes in oil
2 garlic cloves
6 Tbsps olive oil
3 Tbsps balsamic vinegar
2 tsps grained Mustard
1 Tbsp Caper
250 grams Broccoli
250 grams fresh Tomatoes
1 red Bell pepper
1 bunch scallions

Preparation steps

Cook the pasta in plenty of boiling salt water until al dente. Roast the pine nuts in a dry frying pan. Cut the dried tomatoes into strips. Peel the garlic. Mix the olive oil, vinegar and mustard. Season with salt and ppeper. Add the capers, pine nuts, tomatoes and squeezed garlic. Stir in 4-6 tablespoons of pasta water.

Drain the pasta, rinse in cold water, drain and mix with the dressing.

Rinse the broccoli and divide into florets. Blanch the broccoli in boiling salt water for 5-6 minutes. Rinse in cold water and drain. Halve the tomatoes, blanch in cold water for 1 minute, rinse and peel. Dice the tomatoes. Cut the pepper into quarters, remove the seeds nd finely chop. Rinse and finely chop the scallions. Mix the vegetables with the pasta. Season with salt and pepper. Serve immediately.
