- 26 ozs waxy potatoes
- 1 onion
- ½ cup vegetable stock
- salt
- freshly ground Black pepper
- 1 ½ ozs Watercress
- 2 Lettuce (e. g. Batavia, Romaine)
- 4 Tbsps chopped, mixed Fresh herbs (e. g. parsley, chives, dill, basil, chervil)
- 2 Tbsps small Caper
- 6 Tbsps white wine vinegar
- 1 tsp Pumpkin seed oil
- 3 Tbsps sunflower oil
- 1 pinch sugar
- 7 ozs smoked Salmon
Preparation steps

Wash and peel the potatoes and cook in salted water for about 25 minutes, or until done.

Peel and finely dice the onion. Put the vegetable stock into a small pan and bring to the boil. Add the onion and simmer for 2-3 minutes.

Drain the potatoes, slice thickly while still hot and pour the hot onion stock over them. Season with salt and pepper.

Sort and wash the watercress and lettuce leaves and spin dry. Shred the lettuce leaves. Add both to the potatoes along with the herbs and capers.

Mix the vinegar, pumpkin seed oil, sunflower oil, salt, pepper and sugar to make a dressing. Pour the dressing over the salad in the bowl, mix carefully, check the seasoning and spoon the salad onto plates.
6.
Cut the smoked salmon into strips and scatter over the potato salad.
