You can get soy-based vegetable skyr in well-stocked supermarkets and health food stores. If you can't get any, you can also replace it with the cow's milk version. If you want to make the skyr dessert vegan, replace the honey with maple syrup.

¾ oz coconut chips (about 5 tsp)
1 oz hazelnut kernels
1 ¾ ozs Pumpkin seed
1 oz Sunflower seed
1 oz Shelled peanut
¾ oz slivered almonds
1 Vanilla bean
18 ozs Soy based Skyr
2 tsps honey
1 generous pinch ground Cardamom
3 ozs herbal cream substitute (To whip)

Preparation steps

Spread coconut chips, hazelnuts, pumpkin and sunflower seeds, peanuts and almonds on a baking tray covered with baking paper and roast in a preheated oven at 160 °C / 320 °F for approx. 10 minutes until golden brown.

Cut vanilla bean in half lengthwise and scrape out pith with a knife. Stir Skyr with honey, vanilla and cardamom until smooth. Whip the cream until semi-stiff and fold into the Skyr.

Remove nuts and seeds from oven and let cool for 5 minutes; then chop coarsely. Divide vanilla cream among bowls and enjoy Skyr dessert sprinkled with mixed nuts.
