- 6 stalks green Asparagus
- salt
- 1 Zucchini
- 1 handful mixed Fresh herbs (such as dill, chervil, parsley, chives)
- 4 red Plum
- 150 grams Yogurt (0.1% fat)
- 3 Tbsps Vegetable broth
- 2 Tbsps acid Whipped cream
- 1 Tbsp Horseradish (jarred)
- salt
- freshly ground peppers
- 1 tsp lemon juice
- 300 grams Smoked salmon
Preparation steps

Trim the bottom 1/3 of the asparagus, discard and slice the rods cross-wise. Blanch asparagus. Rinse zucchini and thinly slice lengthwise. Rinse herbs, pat dry and pluck from stems.

Rinse plums, halve, pit and slice.

For the dressing: stir yogurt with broth, sour cream and horseradish. Season with salt, pepper and lemon juice.

Arrange salmon slices on plates. Mix herbs with the zucchini, asparagus and plums. Spoon onto the salmon. Just before serving, drizzle with dressing.
