1 red Bell pepper
1 yellow Bell pepper
1 green Bell pepper
1 onion
1 garlic clove
2 small Tomatoes
1 can Tuna
2 ozs pitted, green Olives
7 Tbsps Sour cream
1 Tbsp lemon juice
salt
peppers (freshly ground)
2 hard-boiled eggs

Preparation steps

1.

Rinse peppers, halve and remove seeds and ribs.

2.

Cut half of each red, yellow and green peppers into small cubes. Peel onion and garlic and chop finely. Rinse tomatoes and cut into wedges. Drain tuna and separate wtih fork.

3.

Cut olives into thin slices.

4.

Peel eggs and cut into small cubes.

5.

Combine sour cream with lemon juice and season with salt and pepper.

6.

Mix all ingredients with sour cream and stuff halved peppers with the mixture.

7.

Place lettuce leaves on plates and arrange stuffed peppers on them.
