100 grams ground Millet
50 grams ground almonds
1 egg
4 Tbsps honey
1 pinch salt
½ organic lemon (finely zested)
150 grams cold butter
butter (for the tin)
breadcrumbs (for the tin)
200 grams Sour cream
1 kilogram tart Apple
2 Tbsps Apricot jam

Preparation steps

1.

Mix flour, millet and almonds on work surface, make a well in the center and pour in egg, 1 tablespoon honey, salt and lemon zest. Distribute butter in small pieces around edge and knead everything quickly into smooth dough. Form dough ball, wrap in foil and refrigerate for 1 hour.

Preheat oven to 250°C (approximately 485°F.)

Grease tart tin with butter and sprinkle with breadcrumbs.

Roll out dough on lightly floured surface, transfer to tart tin and form an edge. Prick bottom of dough several times with fork and brush with sour cream.

5.

Peel, quarter, seed and thinly slice apples. Arrange apple slices tightly on dough and sprinkle with 1 tablespoon honey.

6.

Bake in preheated oven for 25-35 minutes until golden.

7.

Warm jam and remaining honey, brush pie with each and bake for another 5 minutes.
